The idea of comfort food and veg don’t always sit hand in hand, but with seasonal star butternut squash you really can have your cake and eat it.
Butternut squash puree tastes great and, packed with vitamin C, magnesium, beta-carotene and more it adds a brilliant nutrient boost to anything from porridge and pancakes to pizza sauce, risotto, soups, cakes, muffins and more.

Preheat the oven to 200C and line a tray with baking parchment.
Grown ups: Cut the squash in half lengthways.
Kids: Rub the cut squash all over with olive oil then roast, cut side up, for 45 - 60 minutes, or until tender.
Grown ups: Remove the tray from the oven and allow to cool.
Kids: Use a spoon to scoop out the seeds, then add the flesh to a food processor and blitz to a smooth puree.
You can now add your Butternut Squash puree to all sorts of delicious treats. Some of our favourites:
Add to breakfast porridge once cooked and top with maple syrup and crumbled pecans.
Stir into whisked egg then dip slices of bread before frying in a little butter for butternut French toast.
Replace some of the white sauce in your favourite macaroni cheese recipe with squash puree then top with toasted seeds and breadcrumbs for a crunchy finish.
Add to chilli con carne for sweetness and a creamier texture.
Make butternut banana bread with chocolate chunks and a crunchy demerara sugar top.
